Mike, There's no explanation yet because it's not yet possible. Bug 303068 is the bug which deals with this problem. Once bug 303068 is fixed, it will be possible to do what you want, but it is not yet possible.
An alternative, if this will be put up somewhere and never used, is to make use of /etc/network/interfaces and /etc/resolv.conf instead. If you use this method, Network Manager won't be able to manage the interface anymore and all changes will need to be made through the interfaces file.
