Then that project can use /usr/bin/python2.N or a local install in
/usr/local/bin.

Yes, it should.

It is not supported to change the link /usr/bin/python.  This file
belongs to the python-minimal package and is carefully managed--by
the system--to keep work with official software packages.

Follow the advice of this error and reset the symlink.
