Please file multiple issues as separate bugs.

There is no interactive text-based installer on the desktop CD.  The alternate 
CD fills that niche.
I imagine the option you selected said, "Guided partitioning - Use entire 
disk", which is why the installer went to the "Who are you?" page; you had 
already made your partitioning selection.  I acknowledge that this text is 
confusing, however there is already a bug filed on it.  As to why you did not 
have the option to resize the disk, you need to post your logs 
(/var/log/installer/syslog and /var/log/installer/partman from your installed 
system) for me to answer that with any certainty, but I imagine it's due to 
your partition layout.

Regarding step 6, it's "Import documents and settings", however it found
nothing that it could import so rather than showing you a blank page, it
skipped to the next step.  Unfortunately, it's not possible to calculate
the number of steps that you will actually see when generating that
number on the bottom of the window.

Finally, other operating systems are added if you use manual
partitioning.  If they are not, please post the syslog from such an
installation attempt in a new bug report, describing the steps you took
to produce that scenario in as much detail as possible.
