Hi Kevin. The hildon-desktop is not suited to run directly from a normal gutsy installation. I suggest your follow the manual installation procedure described here https://wiki.ubuntu.com/MobileAndEmbedded/HildonDesktopManualProcedure or use the moblin-image-creator if you want to create an image suitable to run directly on a device. It is described here https://wiki.ubuntu.com/MobileAndEmbedded/ImageCreation. In both cases you can use Xephyr to show the result. Bear in mind that some tweaking will be necessary yet.
