I too had a lot of mouse and keyboard freezing. Today I ran: sudo aptitude purge irqbalance No trouble since. Touch wood. I presume irqbalance was installed and enabled by default on previous versions of Ubuntu. Why has it been so troublesome on Ubuntu 10.04 though?
