Your modified configuration file was kept, so that should be fine. Its not clear to me what broke in your postinstallation script, but if your system is still affected, you can edit the file /var/lib/dpkg/info/libapache2-mod-php5.postinst And add '-x' to the command line arguments for /bin/sh at the top. Then run sudo dpkg --configure libapache2-mod-php5 That should show the step at which the script fails.
