I am using xdoclet during last 4 months and I would say that happy with it (support of Hibernate3 is great).
But as you said the documentation is very poor, its true. With xdoclet bundle (see link below) goes rich set of tests where you can find usecases for using xdoclet. Also on xdoclet.codehaus.org Confluence contains pages with list of supported tags for all official plugins.
