Charles - When I type in text and then press the space bar (the long key at the bottom of the keyboard), the cursor always goes exactly 1 space across the page. What you're describing sounds like the behaviour of the Tab key (on the upper left side of my keyboard, with arrows on it). It sounds as though your tab settings have been unset or removed for some reason.
There are instructions for setting the tab stops at https://help.libreoffice.org/6.2/en-GB/text/shared/guide/tabs.html. Does that help? That leaves a relatively small amount of text that needs to be stretched to fill the distance from margin to margin, resulting in wide spaces between words. That is more likely to happen if your text column is narrow.
