Hi Karen, It sounds like you're engaging Slide to type, which allows you to type by sliding your finger to all the letters of the word instead of tapping each letter. This feature is engaged if you hold your finger on a letter for more than a second. You can either turn it off or increase the amount of time you need to hold your finger on a letter before it turns on.
To turn off Slide to Type, go to Settings/General/Keyboard and turn off Slide to Type. To change how long you need to hold your finger on a letter to engage Slide to Type, go to settings/Accessibility/VoiceOver/Typing, and adjust the Keyboard Interaction Time.
