Sweet and Sour Chicken with Fettuccine
 
1 lb. fettuccine
6 cloves garlic, sliced
1 bunch scallions, sliced
1 small red pepper, chopped
2 T. extra-virgin olive oil
1 cup chicken stock
1/2 cup sugar
salt to taste
1 tsp. light soy sauce
1/2 cup white vinegar
1 tsp. ground ginger
2 T. cornstarch
red food coloring, if desired
3 cooked boneless, skinless chicken breasts, cut into chunks.
 
Cook the pasta according to package directions. 
In a large skillet, saute the garlic, scallions, and red pepper in the
olive oil until soft. Add the chicken stock, sugar, soy sauce,
vinegar, ginger, cornstarch, and food coloring. Bring to a boil,
reduce heat to a simmer, add the chicken, and cook until heated
through. Mix with pasta and serve.
 
Makes 4 to 6 servings
