Guava Cake (Masa Real de Guayaba) 2 cups (500 ml) all-purpose flour 1 cup (250 ml) sugar 3 tsp (15 ml) baking powder 1 tsp (5 ml) salt 3 eggs plus 1 egg yolk 1/2 lb (225 g) butter, melted 3 Tbs (45 ml) dry sherry or water 1 1/2 lbs (675 g) guava paste, cut into 1/4-inch (5 mm) slices Combine the dry ingredients in a mixing bowl. Add the eggs, butter, and sherry and mix with a wooden spoon until thoroughly combined. Place half the dough into a greased 9x12 inch (23x30 cm) baking pan, pressing it with your fingers to make a smooth, even layer. Top with the slices of guava paste and spread the remaining batter over the top. Bake in a preheated 350F (180C) oven until lightly browned, about 40 minutes. Cool to room temperature before cutting into 2-inch (5 cm) squares. Serves 8 to 12.
