The water leaves a residue. Have a look at your kettle and you'll probably see a limescale mark around it! Even if it's fairly soft water, there's still loads of impurities in it that will leave a residue and sound. How bothered you are about this depends on you...
Best bet is to get some distillied water from the chemist and use that. You can also get isoproply alcohol pretty cheap from a chemistry supplier and use a solution of that.
