G'day Tyler I am using the built-in isight on my iMAC (3GHz Inter Core 2 - OS X 10.5.6) and using a VideoService and it works fine.
I might add that I haven't really tried using a Video Consumer and Video Producer, so I cannot confirm if this is a particular issue. In regards to Audio, if you don't already know, the Audio on the mac is quite terrible and I believe that there is effort currently underway to try and fix this. But in the time being, you might want to check out http://www.accessgrid.org/node/1792, as there are some tips to help make audio work a little better.
