I just keep walking holding on to the sighted person's elbow as I normally would. Once you get on an escalator, you have a few seconds before the platform you are on starts going up or down at which point, you usually have to adjust your foot a few inches forward or backward. I usually end up one stair behind the person escorting me both while going up and going down.
