The best way to deal with is to use Jaws 12. Previous versions of Jaws do not quite support MS Office 2007 and later. In Jaws 12, there is the Virtual ribbon. Ones you enable the same, you should be able to access the options of each menu by pressing the down arrow key. If you don't hve Jaws 12, then its better to revert to Office 2003, as working with office 07 and earlier versions of Jaws is somewhat dificult unless you don't know most of the keybord commands. best,
