In the IIS MMC console right click on the site you want to enable logging for and click properties. At the bottom of the Web Site tab click the Enable Logging checkbox, choose the format you want (I'd go with W3C Extended, but other people may have other preferences). Click the Properties button to configure things such as where to store the log files, how often to start a new file etc etc.
Then you will need to get a program which'll analyse the log files for you. There are plenty about - maybe someone on the list can recommend one (we do our logging differently here and so don't need one).
