As has been pointed out, there are a number of resources at MS for the
various platforms showing the available settings. 

If you want to see some examples of what folks are actually doing in
production, the university folks seem fairly forthcoming, I found lots
of examples in the .edu world on a similar quest last year. Google
'"group policy" spreadsheet' and some nice examples are out there.
