Do you want to replicate the entire profile or only the Oulook portion of it? Since you are running Exchange 2000, you must be running Active Directory. Are you desktop clients all Wincows 2000 or better? If so you can setup a Group Policy w/ folder redirection. Folder redirection is under GPO\User Configuration\Windows Settings\Folder Redirection. If you are only after the Outlook profile information, I think you can just redirect Application Data. (I haven't tested this.)
