Secondly, I want to find out if any one has used this method to carry out an upgrade and advice me if I am doing anything wrong and the best steps I would need to take to ensure the upgrade is successful.
Maybe instead of migrating users to completly new domain You will upgrade Your existing domain to windows 2003, then switch it to windows 2003 native mode and rename the domain ?
