As for the question about upgrading during the day, Ulf gave great advice to weigh that thought with the risk of having to take care of minor issues if you've not done it before. Most likely, nothing to worry about, but making changes during production hours is typically not a best practice. Adding a new DC/GC is not a big deal in most environments.
