Nicole, The University of New Mexico's policy on Incentives for Program Participants<http://policy.unm.edu/university-policies/2000/2480.html> addresses gift cards for research participants and other program participants. We also have a separate policy on Staff Recognition Programs<https://policy.unm.edu/university-policies/3000/3235.html>; gift cards would be treated the same as other cash equivalents under this policy.
