I tried to get my Office 2007 to deploy for a couple of weeks. I ended up using the setup.exe /admin switch, creating a .msp which get's stored in the Updates folder. Then I created a bat file calling out the setup.exe. This is what I used in GP.
It took me a while to get it working but eventually it did.
