That was a great explanation, and I'm sure a lot of people benefited from it.. Thanks
for taking the time to write all that down.

The (analog) TV signal is divided into odd and even lines of pixels.
TV's display one half of the screen at a time,
either the odd lines (upper fields) first, or the even lines (lower fields).
This is commonly referred to "interlacing".
Example:
Upper fields Lower fields
(odd lines) (even lines)
1------------------------
-------------------------2
3------------------------
-------------------------4
5------------------------
and so on, up to 320 lines for a standard resolution.
NOTE :
HDTV, Satellite TV and some other less common formats
have more than 320 lines of resolution.
Which one needs to be displayed first depends on the display used.
NOTE :
I can't remember which is proper for standard TV screens.
Someone more familiar with creating video for display on commercial
TV sets may have a more definitive answer which is correct.
Computer monitors, on the other hand, displays the entire screen at
on time. This is why you don't use fields for videos intended for display
on a computer monitor.
"interlaced" video (intended for TV) needs to be "de-interlaced" to properly
be displayed on a computer monitor. What the de-interlacing does, is add
the odd and even (upper and lower) fields together, to create a complete
screen image for computer display.
As to what is best for you, it depends on what medium you plan on
displaying the video, a TV or a computer monitor.
"Fields" aren't a quality issue, they're a display issue.
