One way they do is, if they have a live synced switch like Tom said,
then they record it as it is directly to a 'hard drive' and already
locked in place, so the music would be play through easily.  However,
sometimes there might be mistakes that it can't be fix (like those live
concerts).

The other method, each camera records the performance of a day or two or
3, so let say this is how you ended up:

Day one
Cam 1 2 tapes
Cam 2 2 tapes
Cam 3 3 tapes

Day two
Cam 1 2 tapes
Cam 2 1 tapes

You make sure the audio on all cameras are on, since there isn't time to
slap a slate, so that will be the easiest way to sync them up.

Now, capture all into your computer, then line up the videos from Day 1
and 2 together sync them with the audio track, if there's a 'change'
then cut it with razor blade and adjust it through frame based and sync
it up.

Then bring in the GOOD audio mix, can be a CD audio or a clean recorded
mix directly from the concert into their soundboard to a cd

Sync that up with the waves files from each video clips that already
lined up, and line this one up.

Now, with previous premiere pro 2. (before the 2) you just turn on and
off the eye icon to see the track and just razer blade cut between them
(which is how I do with music videos and event videography).

If you find one video track is not good, use the other, and if ther's
more sizzling needed, you can do a picture-in-picture thing or a layers
of videos, or add text. Now, if you need to make the sound mre fun, add
applauds, screams in another audio trck.

Once everything is done, turn off the bad audio tracks and there you go.

Ok, now you want to add scenes that doesn't related to the concert but
it might relate to the video, just use abouve and add it on spot where
needed on another track.

This isn't that easy but it takes time. However, if you are already been
doing this for a long time, you can easily sync it, like all my
short/feature films including the music video I've done, they are all
synced videos and audios during post, so I have more mobility with the
equipment and not worrying about drop audio with my tapes. And usually
it takes me just 30 mins to sync them up (even with 2 hours footages).

Hope this would give you a really general idea how to do it.

  I would be willing to bet that the audio and video were shot, edited
and recorded live.  With the use of a production switcher, you can
switch to any camera at anytime during the concert.  They most likely
got a live 'feed' from the audio mixing board, and then combined it with
the video in the switcher and sent the feed straight out to any ome of
severaly sources, including a DV deck.
