By rolling do you mean horizontal or vertical scrolling?
Subtitles in DVD aren't limited to just plain text along the bottom. They're
actually graphics, not text. The images can be anywhere on the screen and can
be any shape.
Two examples of such non-traditional use of subtitle graphics are the DVDs of
the Pioneer Signature Series release of the anime movie "Akira" with the
'capsule' feature turned on and the six episode OAV "FLCL", single disc version.
How you might create a scrolling effect is by altering the position of each
subtitle image as frequently as the DVD authoring software will allow. If you
can't alter the location in short enough intervals you'll get jerky animation.
In that case it would be better to slow the motion down so the viewer has time
to read a line before it moves.
