You can create a copy group with zero retention. Include the folders that you don't want backed up in the new group, and run an incremental to rebind them. Then, exclude the folders from backup, they will expire at the next incremental. (Only files still active in the folders will be rebound, so you may still have some inactive data that will follow your default retention)
