Generally audio recordings are considered illegal unless the targets are
informed. It also varies by state.

I also found out that employees are frequently recording meetings when you are doing any kind of corrective action with them. Not a lot you can do about it as Utah is a one party state.

Wandering off topic even more...

There was a local businessman known for recording conversations. The
last meeting I had with him I told him that I'd forgotten to bring any
recoding equipment, and that I'd appreciate a copy of what he was going
to have.

He never acknowledged my statement by voice, or action.  He just kept on
with the meeting as if I'd never said anything.  One of the more surreal
moments in my life.
