7 quarts. Or you might feel better with 7 1/2 quarts. I put 8 quarts in
the spider bat wing pans. That includes the pint or so that fills the cam
galleys and the amount in the oil filter. And that assumes there is not a
bunch of grunge in the bottom of the oil pan.
Use a turkey baster and
paper towels and solvent to clean up the cam galleys. With the valve cover
off, check the valve lash and tighten the timing chain. Fill the oil filter
about 1/2 full. Put the remainder of 5 quarts in the oil pan. Start the
engine to fill the oil filter.
Let all the oil drain back to the oil
pan. Remove the dip stick. That should be the empty or 2 quart low mark.
You might want to drill a small hole there. Add another quart and mark the 1
quart low spot. And add the final quart and mark the full location on your
dip stick.
The reason for marking with a small hole is that the holes
hold oil and make it easier to read. Some Alfa dip sticks have holes from the
factory.
I have had to mark my own dip stick when mixing and matching
engines with oil pans. Some Alfa pans have the dip stick on the pan. Some
have it on the engine block. Just make sure you have at least one location
for a dip stick when mixing parts.

I have the correct dipstick . Looks like 5 qts
fills it . Better still , how
about a measurement on a correct dipstick from
the bottom of the flange to the
