Some events (like key input) can surely be buffered easily but there are so many other things that a user can do to the document that it would be a huge amount of work to "buffer" all this and it is also not very likely that it is reliable. So let's think about buffering at least the key input. This means: let the user type while the document is saved and let OOo collect the key strokes. But the user won't see what she has typed until the document finished saving.
