Matt,

You could copy/rsync/whatever your amanda config directory and
subdirectories, this will provide index and history.

But in worst case you can unpack the amanda dump files without
that, you (optionally) decompress the dump file, use the analog
of whatever utility created the dump stream (restore if dump'd,
gtar if gtar, etc), and (optionally) decompress that output stream
[I don't think you EVER run both SW and HW compression on any given
 dump file, you may use no-compression].

You don't need amanda to recovery amanda data. The usual phrase is
that "amanda allows for bare metal recovery", amanda moved the data
through well known utilities such as gzip, gtar, *dump and *restore
(and I've personally also used (shilly) star, xtar, ufsdump, xfsdump,
efsdump...)

All of this should be well covered in other threads.

This of course leaves out the retrieval from the S3 cloud, which
I know nothing about but you must already be comfortable with.
