So the bottom line is you are saying that there is no problem sending mail to [EMAIL PROTECTED], but when you attempt to quarantine mail to that address, sendmail is unable to deliver messages to it.
What, if anything, have you set: $spam_quarantine_method to? If you have set this to something, try commenting it out so amavisd-new uses the default.
