MacOSX uses postfix right? Is it possible that postfix is getting a failure trying to connect to localhost (content_filter) while amavisd is being restarted, and so is delaying delivery for a short while? Grep your /var/log/mail.log for "status=deferred.*127.0.0.1" around the time of log rotation.
