I'm running Postfix, Postgrey, Amavisd-new, SpamAssassin and ClamAV on
CentOS 5.3, all with info from CentOS wiki - eg:

http://wiki.centos.org/HowTos/Amavisd

Works fine. Install Postfix in CentOS, do a mail switch from Exim or
Sendmail, then go from there with the HowTos. I'm using Cyrus, but
once you have Postfix calling successfully Amavisd-new the rest to
Dovecot should be easy.
