ok, well, 'which slider works' is another issue, but can you try the color slider to some other values apart from 0 ? see if it really keeps the exact same value after you restart (maybe you need to restart the PC or just change those values using another application to see if amsn changes them back to what they're supposed to be or if it does nothing but as long as you didn't reboot, the kernel keeps the old value saved).
Also try to have a visual effect on the cam, so for example, you put it in black and white (color=0) and see if you get it black&white next time (maybe the setting is set to 0, but the image doesn't reflect that setting?)
