That's not what the term VHOST means. If you look carefully, you'll find that there are log entries that have entirely "foreign" servers listed in this field. You might be able to treat that field as a VHOST field by specifying it as "%j://%v/%j" in your LOGFORMAT but you would also have to use VHOSTALIAS to treat www.compsoc.man.ac.uk the same as www.warped.man.ac.uk. But it won't reflect any requests to your site that came from bookmarks or from links on external websites.
