Well, Analog is originally designed to analyze web logs, so it's
language and parsing are focused on that. It does pretty well with ftp
logs. There is a helper application to coerce it to handle mail logs.
It doesn't do very well with proxy logs (because it's not really meant
to handle two directions of data). If you get useful analyses out of
it, you can always customize the language files to make the reports
even more meaningful. Of course, YMMV.

I'm not sure I understand what you are saying. If you use any
'incremental processing' (i.e. cache files) you can accurately process
each day as it comes, but still report on longer periods (week, month,
year, ...).

AFAIK, Analog ignores the HTTP request method entirely when processing
the log files. It should read PUT, POST, GET and HEAD equally.
