Maybe they retrieve it via WHOIS'ing the domain name associated to the developer contact information (meaning the whois information is not protected/obfuscated) or via crossing information from Google search until they reach a "valid" address. Worst case scenario would be that Android Market is giving this information but I seriously doubt.
