Given the story on the build, I'd go SSD for sure. Start-up will be nice and snappy (<30s for my MBP), but general I/O is where you'll reap the biggest benefit. If you have a bajillion files in your build, that's probably what's kicking your butt.
Get the MBP with as much RAM and SSD as you can afford. It might be a bit more expensive than a similarly equipped Windows box, but it's worth it if you value time over money.
