The default settings for Eclipse on OS/X do not allocate enough memory for it. Eclipse runs within a fixed amount of RAM, and if it isn't allocated enough it will spend all its time garbage collecting. Unfortunately, I don't know how to change the settings on OS/X; on Linux there is a configuration file read by the startup script.
