What I did is create folders (games, gps, reading, communications, ....) on the 3 panels of Home application. To do that, long press on desktop, you get a dialog, select "Folders". (You can rename it later). Then open the folder and from the slider with all apps, just long press to drag the app shortcut into the folder. The home screen can be modified as will, by removing app shortcuts, adding others, or widgets, folders,.... If you really want you can also change the whole Home application. (ex. Panda Home is free). It may bring you interesting other functions (ex. other drawers). Biggest problem in my case is performance. Due to limited RAM, you often have to wait too long for Home to recover.... (though all these folders and shortcuts probably just make it a bit worse). And the app drawer takes really long to recreate its whole list when there is a lot of apps (in case it was crashed because of lack of memory I guess). There is room for improvements I think. Desktop / drawer state should be cached on "disk" (ideally I'd even like an option to put it into SDcard instead of internal mem).
