I got the same problem running Debian. I dowloaded the source from
Oracle and built it according to the instructions. Beware not to
install the 64-bit version on a 32-bit system, but the other way around
works.
Look for "Java for developers", JDK.
I choose "Java SE Development Kit 7u9" and the variant apropriate for
my system. You will find a package version for MAC OS X, so you don't
have to compile it manually.

.acx files are optional, so no need to worry about that (see
[3]http://wiki.apertium.org/wiki/Acx for what they do, I don't think
they're able to deal with the German double-s unfortunately).

Sounds like a good start, although after doing the closed classes
(pronouns, conjunctions, etc.) it would be a good idea to prioritise
sort the words you are about to translate by frequency.
