I believe the key here is that you were out of town, I'm betting in a different timezone. I travel a ton too but sync to my laptop so I see the pattern more clearly. Basically, the first sync performed after entering a new timezone where the iPhone updates its clock automatically will undo any changes to the items you've marked complete on the iPhone since your last sync. It may go beyond the completed items (like reinstating ones you've deleted on the phone) but I haven't really tested it to that extent.
