Are your calendars checked in iCal? If a calendar is unchecked, it won't show the tasks.
Is your To-do list showing? In iCal, View menu, Show To do list. Oh, never mind, just re-read your post. You're obviously seeing the todos, but finding that no new items or changed ones are showing up. Hmm... that's a head scratcher. Does closing down iCal and relaunching it do anything? You probably already tried that. How about temporarily removing your iCal calendars and performing a full sync from the i-device? You can find your iCal entries under Users, Your Name, Library, Calendars, drag that folder to your desktop, then trying a full sync from your i-device. Settings, Synchronization, Advanced, Perform Full Synchronization. Note: do NOT tap reset synchronization data or you'll end up with nothing! If you do this, you'll need to restore the actual calendars that have your events in them. (Instead, you could just drag out the individual task calendars.) In any event, be sure you make a backup of stuff before trying anything. If any of this is unclear, don't do it!
