I too have been lucky regarding syncing. As for the starred tasks, they show up in the same place as the priority, so if you don't use them, you don't see them. Think of them as something to bring your attention to a particular task, but not the same as priority. They're another option, just like contexts and tags, neither of which I use.
I totally agree that we want a clean, simple interface. On the other hand, I also understand that it's very difficult to add new features without complicating something.
