Nick:
There cannot be one percentage that is appropriate for all orchardists.
The space needed is the difference between how much
goes in and how much comes out over time. You can estimate that for your
unique business over the time that you will be harvesting and marketing. Allow
for the possibility of adding space when and if the need arises.
