Sure. Data saved on a cassette is just converted to an analogue signal
that can be recorded in any audio format.

There should be no problem. You can even use the same wire as for
LOADing data from cassette. Saving is a horse of a different color: the
Apple II outputs a signal that is suitable for most cassette recorder's
high sensibility microphone input. Beause of that, the signal is too
weak to be connected to a modern line input (as a CD deck "rec" jacks,
or a PC's "line in") - you may need to use an amplifier, or plug the
Apple's output into a microphone input.
Will this procedure work through IIC and IIGS?
No way. They do not have cassette input. In the IIgs, it may be possible
to load cassette data with the help of an A/D converter card and some
custom software, but that should have to be developed. The IIc doesn't
have expansion slots, so you don't have even this possibility...
