I agree. Unnecessary docs should be removed by the package maintainer (like 
libtool-slay is done).

There is no easy way to get back ALL info docs. But you can install the
info-files you miss from the source packages to a private directory and
modify your .emacs:

(add-to-list 'Info-default-directory-list "/path/to/your/info-dir")

Don't forget to update the "dir" file inside this directory (using
install-info).
