We've been running the 6.3p16 client against our 5.1.1 server with arguably better results than the 5.1.1 client (we've got a few managers who prefer the way search results are displayed).  I was running the 7 client with good results as well.
 
Quite a while back I had to do some work on our 5.1.1 server, but at that moment only had the 6.3 admin tool available (due to remote working), seriously bad idea, did not work out too well, just be thankful for regular backups, and my own .def backups.

As I stated earlier, you should not use a downlevel user program (5.1.2 program with 6.3 server) this can cause major headaches.  You can use an uplevel user program ( 6.3 program with 5.1.2 server) as long as the server is at or above the necessary patch level (Mid Tier for 6.3 required a certain patch level for both ARS 6.1 and 5.1.2 servers.)  Under no circumstances should you use a mismatched ADMIN tool as this will definitely cause problems with either features that are not available or form defination files that cannot be read by the server.
