Mark,

I'd hide the original menu and add a dummy menu with the values that you'd 
want.  Have the dummy menu push the matching value to the original menu so 
you don't break any OTB workflow.

On the CHG: Infrastructure Change has anyone modified the values on the 
Risk Level field? OTB it is Risk Level 1, 2, etc. This doesn?t mean 
anything to most people and I have been asked about change it to something 
like None, Low, etc. I am thinking that since this is a zero based 
selection field any workflow associated to this field or any data feeding 
onto this field would be not impacted so long as I didn?t delete any of 
the values (0-4).
