ITSM 7 - renaming "My Company"

** Hi Listers, We are just a few weeks away from going live with our ITSM 7 implementation and have pretty much completed our configuration on the apps. However, a new requirement has surfaced that will require us to use the multi-tenancy feature and add another operating company. My question is - can we rename the default "My Company" to our company name (NYP)? - how do we do this? In the Company form, the company name is read-only. - will this change cascade down to all the configurations we've already done? - any other 'gotchas' ?
